Biography

Dr. Ganesharanee Ravindran is currently a Senior Lecturer in Food Chemistry at the Massey University, Palmerston North, New Zealand. She has received PhD in Food Science and Technology from Virginia Tech University VPI SU, Virginia, USA in 1980-1983; M.Sc., in Food Quality Control from Reading University, UK in, 1978-1979; B.Sc Hons from University of Peradeniya in, 1970-1975. She has a long work experience in the Academic field as a Lecturer to Associate Professor in University of Peradeniya; Research Associate in Virginia Tech University and University of Sydney. She has authored/co-authored 56 papers in refereed journals, 10 book/book chapters, 42 peer reviewed proceeding papers and also made several scholarly presentations to several professional organisations, and has supervised several post-graduate students reading for Masterate and PhD degrees. She is also a reviewer for several journals, Journal of Agricultural and Food Chemistry, International journal of Food Science and Technology, Journal of Food Biochemistry, Livestock Science and Food Technology and Biotechnology journal.

Research Interest

Carbohydrate chemistry and nutrition; polysaccharides and biodegradation; food and feed evaluation; functional foods; development of healthy foods utilizing herbs and spices, natural under-explored plant extracts as functional ingredients in various food systems and evaluation of their functionality, overall quality and health benefits to consumers; Engineering cereals and legumes through extrusion technology and assessment of nutritional and functional benefits.
