Dr. C-Y. Oliver Chen has received his PhD in human nutrition and exercise at Virginia Tech University during the period between 1996 and 2001. Currently, he is working as Assistant Professor and Research Scientist in Jean Mayer USDA Human Nutrition Research Center on Aging at Tufts University. He is serving as an editorial member of three journals like World Journal of Clinical Oncology, Recent Patents on Food, Nutrition & Agriculture, Open Longevity Science. He has authored 36 research articles and 8 reviews or book chapters. He is a member of American Society of Nutrition and American Chemical Society.
His research interests include bioavailability, metabolism, and bioactions of phytochemicals, their interaction with physical activity, and the implication of these relationships to health promotion and disease prevention during the aging process. He is also interested in the role of oxidative stress and nutrition programming in development of chronic diseases, including atherosclerosis, insulin resistance, and obesity.
