Dr. Dike O. Ukuku has more than 28 years of professional experience in universities and industry including 18 years in ARS as a Research Food Technologist at the Eastern Regional Research Center (ERRC). Dr. Ukuku’s research productivity is evidenced by 70 publications in peer-reviewed scientific journals, 12 proceeding, 13 book chapters, and two edited textbooks, and more than 120 scientific presentations at national and international meetings. Dr. Ukuku is a Fellow of the Japan Society for the Promotion of Science and a King-Chavez-Park Future Faculty Fellow. Dr. Ukuku has mentored graduates students (national and international), has extensive collaboration with international scientists. Dr. Ukuku is on the editorial board of several scientific journals.
