professor Afaf Kamal-Eldin has graduated with B.Sc. Honors Chemistry from the University of Khartoum, Sudan 1986 and obtained her M.Sc. from the same university 1990. She obtained a Ph.D. in Food Science from the Swedsih University of Agricultural Sciences 1993 and worked at the Department of Food Science, the Swedish University of Agricultural Sciences SLU from 1994 to 2010. Prof. Afaf has persued research in the area of bioactive compounds in food, their bioavailability and bioactivity and in the area of dietary biomarkers. She is currently working at the United Arab Emirates University in Al-Ain, UAE.
My research has focussed mainly on the area of Food and Health, primarily with levels and health implications of bioactive compounds in foods, antioxidant mechanisms, biomarkers of a healthy diet, and hazardous compounds in food. The research included isolation and structural characterization of unknown compounds, development of analytical methods, studies on lipid oxidation and antioxidant mechanisms, studies on the absorption, metabolism and physiological activities of bioactive compounds, and evaluation of certain food components as biomarkers of dietary intake.
